  • 8 oz cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 10 oz frozen spinach, thawed and drained
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt and freshly ground black pepper
  • Tortilla chips for serving

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. Prepare spinach: Squeeze thawed spinach in a clean kitchen towel to remove as much water as possible. This prevents a watery dip.
  3. Mix base: In a large bowl, combine softened cream cheese, mayonnaise, sour cream, and minced garlic. Mix until smooth.
  4. Add cheeses: Stir in 3/4 cup Parmesan and 3/4 cup mozzarella, reserving the rest for topping.
  5. Fold in vegetables: Add the drained spinach and chopped artichoke hearts. Season with red pepper flakes, salt, and pepper.
  6. Bake: Transfer to prepared baking dish, top with remaining cheeses, and bake for 20-25 minutes until bubbly and golden.
  7. Serve: Let cool for 5 minutes before serving with warm tortilla chips.
