Ingredients
For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/3 cup melted butter
- 1/4 cup granulated sugar
- Pinch of salt
For the Filling:
- 2 pounds cream cheese, room temperature
- 1 cup granulated sugar
- 4 large eggs, room temperature
- 1/3 cup heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons all-purpose flour
For the Berry Compote:
- 2 cups mixed berries (strawberries, blueberries, raspberries)
- 1/3 cup granulated sugar
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
Instructions
- Prepare the pan: Preheat oven to 325°F (165°C). Wrap the outside of a 9-inch springform pan with aluminum foil to prevent leaks.
- Make the crust: Mix graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of the prepared pan. Bake for 10 minutes.
- Prepare the filling: Beat cream cheese until smooth and fluffy, about 3 minutes. Gradually add sugar, beating until well combined.
- Add eggs: Add eggs one at a time, beating just until incorporated after each addition. Don't overmix to avoid cracks.
- Finish the batter: Mix in heavy cream, vanilla, salt, and flour until just combined. Pour over the crust and smooth the top.
- Water bath: Place the springform pan in a larger roasting pan. Pour hot water halfway up the sides of the springform pan.
- Bake: Bake for 55-60 minutes until the center is almost set but still slightly jiggly. Turn off oven and crack the door open.
- Cool gradually: Let cool in the oven for 1 hour, then remove and cool completely at room temperature. Refrigerate overnight.
- Make compote: Combine berries, sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened, about 5 minutes. Stir in vanilla and cool.
- Serve: Run a knife around the edges before removing the springform ring. Slice with a clean, warm knife and serve with berry compote.
