Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar
  • Pinch of salt

For the Filling:

  • 2 pounds cream cheese, room temperature
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons all-purpose flour

For the Berry Compote:

  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the pan: Preheat oven to 325°F (165°C). Wrap the outside of a 9-inch springform pan with aluminum foil to prevent leaks.
  2. Make the crust: Mix graham cracker crumbs, melted butter, sugar, and salt. Press firmly into the bottom of the prepared pan. Bake for 10 minutes.
  3. Prepare the filling: Beat cream cheese until smooth and fluffy, about 3 minutes. Gradually add sugar, beating until well combined.
  4. Add eggs: Add eggs one at a time, beating just until incorporated after each addition. Don't overmix to avoid cracks.
  5. Finish the batter: Mix in heavy cream, vanilla, salt, and flour until just combined. Pour over the crust and smooth the top.
  6. Water bath: Place the springform pan in a larger roasting pan. Pour hot water halfway up the sides of the springform pan.
  7. Bake: Bake for 55-60 minutes until the center is almost set but still slightly jiggly. Turn off oven and crack the door open.
  8. Cool gradually: Let cool in the oven for 1 hour, then remove and cool completely at room temperature. Refrigerate overnight.
  9. Make compote: Combine berries, sugar, lemon juice, and cornstarch in a saucepan. Cook over medium heat until thickened, about 5 minutes. Stir in vanilla and cool.
  10. Serve: Run a knife around the edges before removing the springform ring. Slice with a clean, warm knife and serve with berry compote.
