  • 2 large heads romaine lettuce, chopped
  • 1/2 cup freshly grated Parmigiano-Reggiano
  • 2 cups homemade croutons
  • 2 anchovy fillets, minced
  • 2 cloves garlic, minced
  • 1 egg yolk
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon Worcestershire sauce
  • Salt and freshly ground black pepper

Instructions

  1. Make the dressing: In a large bowl, whisk together minced anchovies, garlic, egg yolk, lemon juice, and Dijon mustard until well combined.
  2. Emulsify: Slowly drizzle in olive oil while whisking constantly to create a creamy emulsion. Add Worcestershire sauce and season with salt and pepper.
