- 2 large heads romaine lettuce, chopped
- 1/2 cup freshly grated Parmigiano-Reggiano
- 2 cups homemade croutons
- 2 anchovy fillets, minced
- 2 cloves garlic, minced
- 1 egg yolk
- 2 tablespoons lemon juice
- 1 teaspoon Dijon mustard
- 1/3 cup extra virgin olive oil
- 1 teaspoon Worcestershire sauce
- Salt and freshly ground black pepper
Instructions
- Make the dressing: In a large bowl, whisk together minced anchovies, garlic, egg yolk, lemon juice, and Dijon mustard until well combined.
